1. Petra Bistro Original House Spice for Lamb, Beef and Chicken

The first of our two Original House Spices is modeled after one of the most popular spice mixes used in the Middle East and designed to complement your favorite red meat or poultry dish. Coat your kabobs, spiced chicken, or oven-roasted lamb with a healthy sprinkling, add it to lentil or chicken soup, or even use it to season heartier vegetables such as potatoes and carrots. Allspice, sea salt, black pepper, cinnamon, nutmeg and cayenne pepper add a subtle heat to any savory meat dish — simply drizzle with olive oil, season to taste, and prepare as usual, or incorporate our mix into this classic kabob recipe. Alternatively, try marinating your kabobs with our versatile Mediterranean Seasoning.

Mediterranean Grilled Chicken Kabobs

4-5 boneless skinless chicken breasts (2 lb), cubed
1 yellow onion, sliced

In house, we use this blend in popular dishes such as the Taste of Africa, Mediterranean Salmon and Prawns, and Veggie Royal — but at home, try it over your favorite seafood, mixed veggies or firm tofu. 1 cup thinly sliced leeks (white portion only)
2 garlic cloves, minced

12 large fresh basil leaves

3. Mint Oregano

Dried mint and Greek oregano deliver an herbal kick when used as a rub for meat, including in this lamb chop dish. For a vegetarian option, pair with Sumac and mix into a Mediterranean salad for additional fresh flavor.

4. Sumac

The deep red Middle Eastern Sumac berry is harvested, dried, crushed and bottled before our Sumac reaches your pantry. Its mild tanginess adds oomph to meat, veggies, salad dressings and rice dishes, and the spice is commonly used in traditional dishes such as Fatouche or Musakhan.
